This knife product uses advanced ceramic material called zirconium oxide (also called zirconia). Zirconium oxide is extremely hard, wear resistant, and chemically inert. Zirconium oxide has a hardness of 8.2 mohs (vs. steel at 5-6 Mohs and diamond at 10 Mohs). Ceramic blades are very dense "non-porous" and impervious to corrosive items (such as acids, and salts), and won't rust, pit or leave a metallic taste on foods (hypo-hygienic). A quick rinse in warm soapy water will get a ceramic knife a lot cleaner than a metal knife.
Pegasus Essentials Ceramic knives blade edges are sharpened by a multi-channel fine grinding processes allowing the blades to stay sharp for years (if general care procedures are followed). While metal knives quickly become dull with normal use and require regular sharping. The "non-porous" characteristic of the Ceramic material make the blades anti-sticking and allow vegetables (like tomatos and cucumbers) to be cut so thin the slices looks translucent.
Another key advantage of ceramic knives are their reduced weight. The same size stainless blade weighs significantly more. The product uses ergonomic handles which makes it easy to use for Home and Professional Chefs Alike.
