The new product is a 12-cup pan that makes standard size muffins and cupcakes. What is not typical of this new pan is that it is made from silicone instead of a metal. Silicone has physical properties that are very different from metal. DSB Products has stated that their goal is to inform and educate people about the reasons one should consider baking with silicone pans instead of the traditional metal pans.
Silicone pans are not stiff or rigid like a metal pan. Silicone is a very pliable and flexible material and has many commercial uses. Silicone has a look and feel that is similar to rubber, but silicone is not rubber at all. It has very different material properties. Silicone can withstand higher temperatures than typical rubber products and is therefore suitable for use in ovens. Silicone is derived from a pure and fine grain sand which is transformed through heat and additive processes, then colored and molded into many functional shapes. This material meets the safety regulations of the FDA for food contact.
Silicone is molded into many different shapes of pans and can be made in virtually any color. According to D.S. Barnett, owner of DSB Products and the Happy Cook product line, the initial surprise most people have when they are introduced to silicone baking pans concerns the flexibility of the pan. Barnett said, "Many initial comments I hear from customers new to silicone pans is that they did not expect the pan to be so flimsy. I reply that even though flimsy is normally a bit of a negative word, in the case of a silicone pan, the flimsiness is what makes the pan special. Flexible may be a better description."
Unlike a metal rigid pan, silicone pans will flex and bend, allowing the pan to be peeled away from the goods that were baked in them. Additionally, another property of the silicone material is that the surface is inherently non-stick without requiring another material such as Teflon to be applied to the surface. Most manufacturers of silicone pans for cooking recommend that silicone pans be placed on a cookie sheet or other flat metal pan when moving in and out of the oven. The extra support is needed to prevent spillage especially for the larger pans that can be relatively heavy from the unbaked batter put in them. D.S. Barnett also stated that "We recommend using a non-stick cooking spray on a silicone pan in most cases as well, even though you can usually get away without the spray."
Silicone baking pans are also safe for use in a microwave, dishwasher and the freezer. Silicone is resilient and will maintain its shape indefinitely. Silicone pans can be mashed and squeezed when stored and they will pop right back into their molded shape when taken out. Silicone pans do not absorb odors or retain any flavors after use. The pans will be damaged by open flames or hot electric stovetop burners. Knives and other sharp instruments can cut the silicone. Manufacturers recommend taking care to safeguard your silicone pans from these elements.
